Paul Collins Starwood Report 2009
I would like to start by saying thank you to the selection committee CHTA Education Foundation and Starwood for affording me this wonderful opportunity. My experience at the Culinary Institute of America was very educational and fun. The Faculty was professional and very organized. They were very supportive of my goal to become a professional. While I was on campus I made regular visits to the Conrad N. Hilton Library which housed one of the largest culinary collections in the country with nearly 76,000 volumes. There I found current periodicals, a file of contemporary menus and a rare collection books.

I was enrolled at the institute for three courses, unfortunately, while I was there my Asian Cuisine course was cancelled, but, I was able to visit their video center and view DVDs on Asian Cuisine and cooking techniques. My Mediterranean Cuisine course was extremely informative and I enjoyed working along with other students to prepare the required dishes daily.

It was truly a wonderful experience one that I will treasure. It was not only beneficial to my education and growth professionally, but, gave me the opportunity to make new friends for life.
