Garmon Greenaway - 2005
Studying at the Culinary Institute of America, the world's Premier Culinary College at Greystone located in Napa Valley California has been a plus for me. It has enhanced my wine knowledge in terms of the cultivating of the grape vine, from trellising to harvesting and from fermentation to bottling of the wine.

I successfully completed and was awarded Certificates in Italian Intensive, Rhone Intensive and State of theĀ Art Professional Wine Service.

Each week-end I was away I enrolled in extra classes directly with Californian vintners. I visited different wineries and learnt about planting techniques and their individual wine making skills. I used my time away 100% on wine because this was an opportunity I would never have again.

This season I have proudly increased and developed our wine list at Santorini Restaurant at CuisinArt Resort & Spa on Anguilla in areas such as California, France, Italy, New Zealand and Argentina, due to my studies at the Culinary Institute of America at Greystone.

Many thanks to the Caribbean Hotel Foundation, who has funded my studies through their Foundation Scholarship program and assisting me in achieving my goal.
