Paula Rolle-Tongue - 2006
CHTAEF_PTongue.jpgPaula studied at Cornell University during the summer of 2006 and completed a course in Food Service Management.

On the first day of class we were registered and given our classroom location. After which we proceeded to our classroom and met Professor Suskind who then introduced himself and asked everyone to do the same. I sat there and realized that these people were Managing Directors, food and Beverage Managers, Hotel Owners and I'm just a simple waitress. I felt really proud to represent Jumby Bay and most of all Antigua and Barbuda.

Sessions were really heavy because there was so much to cover in such little time. We were taught mostly on the food area and touched a little on beverages. Some of the topics that really intrigued me was cost control, menu pricing and where on the menu you place the most expensive items to attract a customer's attention. All in all it was a wonderful session. My only regret is that the course wasn't a little longer.

I am therefore encouraging young people from Antigu and Barbuda and also the winder caribbean to strive for the best, reach for our goal and let nothing stop you. Let us make the Hospitality Industry the best in the world.
